Avocado Hummus using chickpeas prepared in the Instant Pot®-www.instantlydelicious.com – Instantly Delicious

Do you love hummus and guacamole? ​Avocado Hummus is a beautiful marriage between the two. I pureed avocado, lime juice, and cilantro with chickpeas that I prepared in the Instant Pot® pressure cooker. It could not be simpler to whip up a batch of hummus before a party, barbecue, or just to have in the fridge for a healthy snack. I like to freeze beans that I prepare in the Instant Pot®, so I can make hummus and dips whenever I want.
This is an oil-free hummus. All of fat comes from heart-healthy avocado. It is smooth and creamy and tastes great with crackers, pita, and raw vegetables. I even like to spread it on toast for a super healthy breakfast. I did not make this batch spicy, but you could easily add red onion and jalapenos for an extra kick. .
Avocado Hummus
​Serves 6

Ingredients:
2 cups prepared chickpeas
​1 avocado
1/2 cup cilantro
​2 limes, juiced
​1/2 teaspoon salt

Directions:
1. In the bowl of your food processor, add all ingredients and process until smooth.

​2. Serve immediately, or press plastic wrap onto the surface to prevent discoloration before refrigerating for up to 4 days.
