Do you love hummus and guacamole? Avocado Hummus is a beautiful marriage between the two. I pureed avocado, lime juice, and cilantro with chickpeas that I prepared in the Instant Pot® pressure cooker. It could not be simpler to whip up a batch of hummus before a party, barbecue, or just to have in the fridge for a healthy snack. I like to freeze beans that I prepare in the Instant Pot®, so I can make hummus and dips whenever I want.
This is an oil-free hummus. All of fat comes from heart-healthy avocado. It is smooth and creamy and tastes great with crackers, pita, and raw vegetables. I even like to spread it on toast for a super healthy breakfast. I did not make this batch spicy, but you could easily add red onion and jalapenos for an extra kick. .
Avocado Hummus
Serves 6
Ingredients:
2 cups prepared chickpeas
1 avocado
1/2 cup cilantro
2 limes, juiced
1/2 teaspoon salt
Directions:
1. In the bowl of your food processor, add all ingredients and process until smooth.
2. Serve immediately, or press plastic wrap onto the surface to prevent discoloration before refrigerating for up to 4 days.
