Instant Pot® Shredded Chicken Tostadas – – Instantly Delicious

It’s time to celebrate Cinco de Mayo! I love that my birthday falls a couple of days before, because it’s easy to enjoy tacos and margaritas for a couple of days. Last year, I shared a recipe forChicken Tacos in an Instant Pot for Cinco de Mayo. This year, I am sharing a slightly different recipe that I like EVEN more.  I made these into filling for tostadas, but this would work easily for burritos, bowls, or tacos.
I have always been envious of people with a Kitchenaid Stand Mixer mostly because of their ability to finely shred chicken, pork, or beef. I am no longer jealous, because last night I decided to shred this chicken in my food processor with the dough blade. I had to shred it in 3 batches, but it was so fast and easy and the texture was fantastic.  If you do not have either of these appliances, you can certainly shred by hand. After the chicken is cooked and shredded, I just warmed it up with salsa and the seasonings for a few minutes using the saute function.  Easy and delicious.
Chicken Tostadas
Serves 8


2 lbs. boneless skinless chicken breasts (fresh or frozen)
1 cup water
​1 tablespoon chili powder
​1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
​1 teaspoon paprika
​1 teaspoon garlic powder
1 teaspoon onion powder
​1/4 teaspoon cayenne powder
​1 cup jarred salsa (I like Frontera Jalepeno Cilantro)


1. Place fresh or frozen chicken breasts in Instant Pot® and cover with 1 cup of water.  Set to Manual High- Pressure, adjusting the time to 9 minutes for fresh and 12 minutes for frozen. Lock the lid, making sure the valve is in the sealing position.  When finished, allow the pressure to release naturally for 5 minutes, then do a quick pressure release by switching the valve to venting. 

2. Remove the chicken and allow to cool for a few minutes. Drain the liquid from the Instant Pot®. Shred the chicken by hand or use a food processor or stand mixer (see note above) to speed up the process.   Return shredded chicken to the Instant Pot®.

3. Set the pot to saute.  Stir in 1 cup of jarred salsa, and all of the spices and seasoning.  Allow to cook for about 3 minutes to combine all of the flavors.

4. Serve as tostadas, tacos, or bowls. Top with your favorites (I used avocado, queso fresco, cilantro, onion, and lime juice) and enjoy!
