Creamy Macaroni and Cheese in an Instant Pot® – – Instantly Delicious

Macaroni and Cheese ​is the ultimate comfort food, and I love it in any form.  Stove top, baked, from a little blue box – you get the idea. I also love making kid-friendly recipes that I can doctor up to suit my adult tastes.  Creamy Mac and Cheese in an Instant Pot® is one of the best kid-friendly meals and it lends itself beautifully to “adult” variations. Kids and grownups alike will love this creamy, whole-grain macaroni and cheese.  Serve it plain or doctored, and I promise, dinner will be a hit!
Pressure cooker Macaroni and Cheese ​is similar to stovetop macaroni and cheese.  If you want to make this a little fancier, you could place the finished macaroni and cheese into individual ramekins and top with bread crumbs, then place the dishes under the broiler for a couple of minutes.  Today I stirred in a spoonful of pesto. Enjoy it plain or with your favorite add-ins.
Instant Pot Creamy Macaroni and Cheese
Serves 8

1 lb. whole wheat elbow pasta (white pasta would also work)
​4 cups water
3 tablespoons butter
1 teaspoon salt
1/2 teaspoon pepper
​1 teaspoon Dijon mustard
dash of hot sauce, optional
​1/2 cup whole milk
​8 ounces sharp cheddar, grated


1. Place macaroni, water, butter and salt into the Instant Pot®. Set to manual – high pressure, making sure the valve is in the sealing position.  Adjust the time to 4 minutes.  When finished do a quick pressure release – white pasta is starchier, so the water can spit through the valve. I release in bursts. Be careful not to burn your hands if you do this.

2. Set the pot to saute and stir in milk, mustard, pepper, cheese, and optional hot sauce.  Continue stirring for 4 -5 minutes, until the cheese melts and the sauce thickens.  Serve immediately.
