Did you know that the U.N. declared 2016 to be the International Year of Pulses? Today, I decided to make one of my favorite pulse-centered dishes in my Instant Pot®.  Lentil Soup is warm, comforting and loaded with healthy nutrients and protein. Because they are small, lentils cook more quickly than other legumes. The pressure cooker makes the soup cook even faster.  ​My vegan, gluten-free lentil soup is more like a stew, but feel free to add water to thin it down to the consistency you prefer.​
Lentils come in many varieties – ​I typically make lentil soup with either brown (the most common type) or French lentils. Be sure to rinse and pick over your lentils before using.  Sometimes I find little stones, which would be an unfortunate surprise in your bowl. Lentils are a great budget-friendly option, as well.  Just two cups of dried lentils makes enough soup to feed my family for dinner and for me enjoy for lunch during the rest of the week.
Easy Lentil Soup in an Instant Pot®
Serves 12


Ingredients:
​2 cups dried lentils, rinsed and picked over
​1 tablespoon olive oil
1 medium onion, diced
2 carrots, diced
​2 stalks celery, diced
​2 cloves garlic, minced
1 teaspoon thyme
​salt and pepper to taste
​1 bay leaf
​1-28 oz. can crushed tomatoes
​1-14 oz. can diced tomatoes, with juices
1/2 cup brown rice
​6 cups water (plus more to thin soup)

Directions:

​1. Set Instant Pot® to saute and heat olive oil until shimmering. Add onion, carrots, and celery and saute for 5 minutes, or until the onions start to become translucent. Add the garlic and stir for another minute.

​2. Add the crushed and diced tomatoes to stop the garlic from browning.  Cover with remaining ingredients, stirring to combine.

​3. Set the Instant Pot® to manual – high pressure, making sure the valve is set to sealing. Adjust the time for 20 minutes.  When finished, allow the pressure to release naturally for 10 minutes, then do a quick pressure release, by switching the valve to venting.  Serve with a piece of crusty bread.

Just found your website tonight. I got my instant pot a few weeks ago and have been looking for a site like this. Thanks very much for doing this. I love lentils and plan to make this for dinner very soon as well as try quite a few of your other recipes.
