I’m back! Salmon Cakes | Instantly Delicious

I’m back! Salmon Cakes

Well I’ve been on vacation for a while, but now im back and making some more delicious food.

Salmon Cakes

Salmon, dill, 3-4 cloves of garlic, 1/2 of an onion, 1small tin of sliced water chestnuts, a pepper, 1egg and breadcrumbs.

Dice onion, garlic, chestnuts and pepper into small pieces. Then cut the salmon into about 1cm cubes. Mix everything together (including 2 tsp of dill). Season with salt and pepper. Add the egg and a handful of bread crumbs at first. Don’t add too much or the mixture will get dry.

When you have a slightly sticky mixture, spray your baking sheet with oil and make tennis ball sized salmon balls. Place on sheet and gently press down.

I added some bread crumbs on top for an extra crunch :) to do this… Mix plain bread crumbs with dill, salt and pepper. Sprinkle on top of each cake and gently press down. Spray the tops of the salmon cakes with a little more oil.  Bake for 20min at 350 and then 5-7 min at 450 so that the cakes turn golden brown.

Serve with sauce:

My sauce had sour cream, 1 lemon, dill, garlic powder and onion powder.

Enjoy :)
