Instant Pot® Barbecue Pulled Pork Sandwiches – www.instantlydelicious.com – Instantly Delicious

Super Bowl LI is just around the corner.  We are big football fans in our house. Once we have decided where to watch the game, it is time to start thinking about food.  This will be my first Super Bowl with an Instant Pot®. In the past, I have used my slow cooker to make chili or meatballs.  This year I am making pulled pork sandwiches in my Instant Pot® and am so excited to share the recipe with you.  This sandwich is sweet, savory, full of crunch, and a little messy.  I love it and think it will be the perfect thing to serve on Sunday. Even if you don’t care about football, these sandwiches should be on your to-make list. Yummy.
MyEasy Barbecue Chicken Thigh recipe uses a store bought barbecue sauce that I doctor with other seasonings and spices. I used essentially the same sauce to make this pulled pork. After the meat cooks, I move it to a cutting board to cool a bit. While it is cooling, I simmer down the sauce using the saute function for about 10 minutes, or until it is the consistence of bottled sauce. After the pork is cool enough to handle, I shred it with two forks and return it to the pot and coat it with the sauce. This recipe includes a really easy cole slaw, which I like to use to top the sandwiches.
​​Instant Pot® Barbecue Pulled Pork Sandwiches
Serves 6 people

Ingredients:

Pulled Pork
3 lb. pork butt roast, trimmed of any visible fat
​1 medium onion, sliced
​1 cup barbecue sauce
1/2 cup ketchup
1/4 cup honey
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/4 teaspoon smoked paprika
pinch of chili flakes

Creamy Cole Slaw
4 cups shredded cabbage or 1 bag of cole slaw mix
1/3 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon celery seed

Directions:

1. Prepare the creamy cole slaw. Add the cabbage or cole slaw mix to a bowl.  Mix together remaining ingredients. Pour over cole slaw and toss to coat.  Set aside in the refrigerator.

2. Slice the onion and layer it on the bottom of the Instant Pot®. Place the roast on top of the onion.  

3. Stir together the remaining ingredients and pour over the pork. Set the pot to the meat/stew setting. Adjust the time to 60 minutes. Make sure the lid is locked and the valve is in the sealing position.  When finished do a quick pressure release.

4. Remove the pork and set aside to cool. Set the pot to saute and simmer the sauce to reduce it down to a bottled sauce consistency, for about 10 minutes. Once the pork has cooled, shred with two forks and return it to the pan to coat with sauce.  Serve the pulled pork on buns and top with creamy cole slaw.
