Instant Pot® Turkey Chili should probably instead be called “veggie chili”, because it is loaded with good stuff. I was afraid that some people would run if I alerted them to the vegetables in the post title, but have no fear. This chili is tasty, in addition to being really good for you. I typically make beef chili, but every so often I want to either ditch the meat entirely, or make it with ground turkey to lighten things up. If I put veggies in any sort of chili, even my picky 13 year old will gladly eat them.  Adding lots of extra vegetables a good way to boost the nutrition of your favorite meals, while still pleasing everyone.
I use a jar of salsa and diced green chilies as a flavoring for this turkey chili. You can adjust the heat by adjusting the heat level of these two components. The recipe calls for at least 6 different vegetables.  I feel that most chili recipes are easily modified, so use whatever vegetables you have and prefer. A diced jalapeno would be a great addition, if you like your chili extra spicy.
Instant Pot® Turkey Chili
Serves 6


Ingredients:
1 teaspoon olive oil
2 lbs. ground turkey
1 bell pepper, diced
2 medium zucchini, diced
1 medium yellow onion, diced
2 cloves garlic, minced
1 medium sweet potato, diced
1 – 12 ounce jar salsa
1-4 ounce can diced green chilies
1 cup frozen corn
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano

Directions:

1. Set the Instant Pot® to saute and heat the olive oil until shimmering.  Add the ground turkey, and cook until no longer pink, stirring to crumble as it cooks, for 8-10 minutes. Add the bell pepper, zucchini, onion, sweet potato, and garlic  Continue to saute until they just start to soften, about 4 minutes.

2. Add the salsa, chilies, frozen corn, spices, and seasoning.  Set the pot to manual – high pressure, making sure the valve is in the sealing position.  Adjust the time to 8 minutes.  When finished, do a quick pressure release by moving the valve to the venting position.  Serve with your favorite chili toppings.

Very good! I added acan of drained red kidney beans and a can of drained cannelloni beans before sealing it up….very good
