Italian Sausage and Zucchini Sauce

I’ve been so busy with my end of year school work that I haven’t had a chance too cook in a long time! Well, yesterday was my last day of classes so I decided to celebrate by making some delicious pasta :). I bought my favorite pre-made pasta sauce (this one is Bertolli Tomato Basil), some ground Italian sausage, onion, zucchini and went to work! You will also need some Italian seasonings for this and cheese if you desire heh.
First, dice the (half) onion and zucchini. I like to also run a knife through my ground sausage to break it up a little. That way when I put it in the pan I don’t get huge pieces of sausage.
Next, heat a large pan and add just a little bit of olive oil. The sausage will have enough fat so that it wont stick, but I still like to have just a little oil in the pan when I start. Add the sausage and when its about half way done add the onions and zucchini.
When everything is finished cooking, pour the sauce into the pan and let it simmer for about 3 minutes. Season (with Italian seasonings) to taste. I used oregano and basil.
Cook your pasta. When it is done add about 1/4c of the pasta water and let simmer for 10-15 min, or until desired thickness. Enjoy!
