Lemony Chicken Soup is a standby because it ​cooks up quickly and is full of lemony flavor. I used the ​Instant Pot®​, premade chicken stock. rotisserie chicken,  and some cut up vegetables to make this quick weekday soup smell and taste like it was simmered for hours on a Sunday afternoon.
My husband is on a quest to eat better.  Often he goes out for lunch or will eat only an apple at his desk.  Neither of those options are particularly healthy, so he decided he would take soup once or twice a week in a thermos to boost his lunchtime nutrition.  He loves soup and will eat all sorts of vegetables when they are cooked in a flavorful broth. This is one of his favorites and has the added bonus of 3 cups of baby greens. Talk about healthy. I cooked the whole wheat orzo in the Instant Pot® along with the soup, but this morning the orzo had blown up in the broth. We don’t mind, but if you prefer for your orzo to remain al dente, cook separately, and stir in right before serving.


Lemon Chicken Soup
Serves 8


1 teaspoon olive oil
​2 celery stalks, chopped
​2 carrots, peeled and chopped
1 medium onion, chopped
​8 cups chicken stock
juice of 4 lemons (about 1/2 cup)
1 bay leaf
​1 teaspoon salt
1/2 teaspoon pepper
​1 teaspoon oregano
​2 cups shredded chicken (from a rotisserie chicken or oven roasted)
1 cup orzo*
​3 cups baby greens (I used spinach, kale, and chard)

​*Orzo will swell in the broth.  If you prefer that it keeps it shape, prepare separately and stir into each individual bowl right before serving. 


​1. Set Instant Pot® pressure cooker to saute.  Heat olive oil until shimmering, then add carrots, celery, and onion.  Saute until soft, for about 4 minutes.

​2. Add the chicken stock, lemon juice, seasoning, spices, and chicken.  Stir in orzo if cooking in the Instant Pot®.

​3. Set the pressure cooker to manual-high pressure, adjusting the time to 5 minutes.  Make sure the valve is set to sealing  When finished, do a quick pressure release by setting the valve to venting.  
When safe to open, stir in the baby greens.  Serve immediately.
