Despite feeling like mid-March most days here in the Midwest, summer is about a month away. What does that mean? Corn on the Cob! My absolute favorite way to make it, is to grill it in the husk. My absolute second favorite way to make it, is to steam it in the Instant Pot®. Nothing could be more simple and I loved not having to fuss with boiling corn on the stove, because sometimes I don’t pay attention and it overcooks. Nobody likes that.
To make corn in the Instant Pot®, you simply shuck the corn and cut off the pointy end, making sure that your ear can fit side to side across the pot. The corn is layered in a crisscross pattern (up to 6 ears) on top of the steamer insert. Add a cup of water to the pot and lock the lid, adjusting to manual-high pressure for 3 minutes. Make sure the valve is in the sealing position. When finished, do a quick pressure release by switching the valve to venting. Top with salt, butter, or your favorite toppings and enjoy!
