Thanksgiving is my favorite holiday. I love gathering with family and loved ones over great conversation, amazing food, and an overall feeling of gratitude.  We have a lot of family at our table with different dietary needs, and at Thanksgiving we make it a point to have at least one favorite for every person.  We have a couple of vegetarians and a vegan.  We have little kids and big kids. We even have some adults who are a little (or a lot) picky.  One thing that most everyone seems to love and doesn’t require any modifications is Cranberry Sauce. Here is an easy recipe for Cranberry Sauce prepared in the Instant Pot®.

Instant Pot® Apple Butter - www.instantlydelicious.com

I recently made apple sauce in my Instant Pot® and shared the easy recipe.  I knew when I made it that I would need to save some of it for this Apple Butter recipe.  My family would have gobbled up all of the apple sauce, because it was so tasty, but the apple butter?  Heavenly. It’s concentrated apple flavor is brimming with fall spices like cinnamon, nutmeg, and allspice (I used pumpkin pie spice.) The apple butter cooks down slowly and your entire house smells amazing. In this recipe, the apple butter cooks once at high pressure, and then the saute function is used to cook it down to the correct consistency.  Patience is key with this recipe.  It takes time to make this delicious fall treat.

Instant Pot Tomato Basil Sauce - Thick, rich, and delicious. www.instantlydelicious.com

This time of year makes me a little sad.  My kids are growing up so fast, and late August always means that a new school year is right around the corner.  For some reason (and it happens every year), I tire of caring for my garden.  Maybe it is because September marks the end of our summer fun.  Maybe I am gearing up for busier days of school and work commitments, or maybe I am just ready for the change in seasons. That said, I usually grow an abundance of basil in my garden.  I diligently water it all summer and then for some reason, I just stop.  This year, I decided I was not going to kill off my basil before I could use it up.  This Instant Pot® Tomato Basil Sauce uses half a cup of basil.  I made a significant dent in my plant and feel so good about making something so delicious for a late-summer dinner.  Tomato Basil sauce is easy, fresh, and fast and it translates really well to cooking in the Instant Pot.

Did you know you can use your Instant Pot® to make barbecue sauce? Well, you totally can.  I used mine to make Honey Chipotle Barbecue Sauce, and it was ah-maz-ing.  It is sweet and spicy and such a nice change from my favorite bottled sauce (which I use frequently, believe me).  I will be sharing another barbecue chicken Instant Pot® recipe soon that features this swell sauce, but in the meantime, make up a batch to use on chicken, fish, tri tip or anything else you would throw on the grill.

UPDATED: After some reader feedback and more recipe testing, I reduced the amount of water in this recipe from 2 cups to 1 cup. You can simmer the sauce further to thicken to your taste. So many of our dinners start with a good tomato sauce. Sometimes (a lot of the time), I open a jar. I am busy and like lots of families, I need to get dinner on the table quickly. Nothing compares to the ease of jarred sauce, but this homemade pasta sauce recipe is pretty darn close and tastes WAY better. The Instant Pot® does a great job of giving it that long-simmered flavor in a fraction of the time.
