Instant Pot® Spaghetti and Meatballs -

Every Valentine’s Day, I make homemade spaghetti and meatballs for dinner.  It is a little love note in a bowl.  The tradition started when my boys were really little and we were watching “Lady and the Tramp.” The romantic spaghetti scene is where it all started, and even though they refuse to watch the movie with my anymore, they are always excited for our Valentine’s Day dinner.
​I realize that this post is about a month post-Valentine’s Day, but I recently tried my favorite go-to recipe in the ​Instant Pot® pressure cooker, ​and I am forever sold on making them this way. Homemade Spaghetti and Meatballs is what I consider a slow food, because it takes a long time to prepare. I love making my own  tomato sauce from scratch and using it as the base for this dish. Typically spaghetti and meatballs involves me making the sauce and cooking it down, then preparing the meatballs and dropping them into the sauce to simmer for about an hour.

My recipe isn’t fussy.  I don’t fry or brown my meatballs. I followed the same techniques I always do, except I made the entire basic pasta sauce in the Instant Pot® and while it simmered, I prepped my meatballs.  By the time, the meatballs were ready, the sauce had simmered and I simply dropped the meatballs into the pot. I boiled my spaghetti while I waited for the pressure cooker to finish and a weekend or special-occasion dinner turned into an easy weeknight meal.
